Dietary teaching for iron deficiency anemia focuses on enhancing the bioavailability of iron. Non-heme iron (found mostly in plant foods) has lower absorption and is easily affected by other dietary components. Vitamin C reduces ferric iron to the more readily absorbed ferrous form and is a key promoter of absorption. In addition, clients should be taught to avoid consuming coffee or tea containing tannins with meals, as tannins bind iron to form insoluble complexes and inhibit absorption.
